Definitely one of the weirdest Star Wars stories ever, the students at Ole Miss, the University of Mississippi, have been without a mascot for several years. The administration put it to the students to find a new mascot for the Rebels. A group of students launched a well-publicized campaign to make Admiral Ackbar, the Mon Calamari leader in Return of the Jedi, the new mascot for the school. Reaction by non-Star Wars fans was mixed, and ultimately Lucasfilm put the kibosh on the idea, but you can read the whole story here.
